Bar Manager - Florentine Marbella !

Florentine is an upscale casual dining restaurant located in Marbella’s Golden Mile. We are preparing to open the rooftop CIELO in summer 2025 and are seeking a Bar Manager to lead our beverage team.

About the Role

Bar Manager will direct a team of 10+ bartenders, manage ordering, stock, menu development, and collaborate across the restaurant’s management ecosystem.

Responsibilities

• Lead a team of 10+ bartenders during peak season, recruit, train, and plan staffing.
• Take full responsibility for beverage ordering, stock control, and cost management.
• Creatively develop cocktail menu and wine list, collaborating and incorporating feedback.
• Participate in the entire restaurant management ecosystem, aligning with brand directions.
• Lead by example, working in service 90% of the time.
