Job OverviewAssist the Chef de Cuisine/Director of Culinary by coordinating and supervising the running of the assigned kitchen department to maintain service standards, achieve budget food cost targets, increase sales, minimise waste, and deputise in the Chef’s absence.
Key Duties and Responsibilities- Ensure immediate subordinates perform within the framework set forth in their job descriptions and performance standards.
- Ensure staff time book is completed daily.
- Ensure all kitchen staff commence duty on time, wear correct uniform, and comply with health regulations.
- Practice daily on‑job training and assist the Chef de Cuisine in monthly training sessions.
- Ensure safe working conditions for all kitchen personnel.
